Is there nothing else that could come out? Like TeX, which is enormous,
and seems like a package that would be less likely to be used by
somebody booting their machine from a live CD. Or is it necessary to
have three window managers on the live CD?

I see three primary uses for a LiveCD. Probably the most important,
IMO, is for new installations. The second is for playing around with a
new distro, or casual booting on a foreign machine. The third is for
rescue.

Since we can't have *everything* on the LiveCD (although Gobo's made a
good attempt at it), it seems like installation and rescue packages
should be prioritized, and then have desktop apps fill whatever is
left. I would argue that this indicates that something else should be
found to drop to ensure that the tools required for 2/3s of the use
cases (installation and rescue) are available.

mdadm and LVM are fairly important parts of an installation or recovery.
