You add them to Packages/LiveCD and edit BuildLiveCD/Data/Package-List
files appropriately.

Just unpack + repack Packages/LiveCD/Scripts--something.tar.bz2. And
remember to rename it to a version such as '2.6.5-zoli' so that it
doesn't conflict with the standard packages.

The only detail, if I recall correctly, is that you can't have more
than one version of the same package in Packages/LiveCD (ie:
Linux--2.6.24.4 and Linux--2.6.24.3).
