I'm not sure if this helps (it'll probably break the graphical
bootscripts themes), but you can try to edit
/System/Kernel/Grub/menu.lst and replace vt.default_utf8=0 by
vt.default_utf8=1.

It seems like there are some patches around to enable Nvidia when Xen
support is enabled. This debian article gives a link to the patch and
shows some instructions on how to apply it:

It might be worth to update the Nvidia recipe if everything works fine.
